MEXICAN MEATLOAF 
3/4 lb. Mexican Velveeta cheese
1 1/2 lb. ground beef
3/4 c. bread crumbs
1 egg
1/4 c. chopped onions
4 tbsp. parsley
Pepper
2 tbsp. milk

Mix beef, crumbs, 1/4 Velveeta, egg, onions, 3 tablespoons parsley, and pepper. Bake 40 to 50 minutes at 350 degrees. Mix remaining parsley, Velveeta and milk and pour over meat. Cook 5 more minutes.
