MICROWAVE PEANUT BRITTLE | |
1/2 c. light corn syrup 1 c. sugar 1 c. dry roasted peanuts 1 tsp. soft butter 1 tsp. vanilla extract 1 tsp. baking soda Combine corn syrup and sugar in 1 1/2 quart round microwave dish. Stir well until evenly blended. Microwave on high for 4 minutes. Stir in nuts. Microwave on high 3 minutes until light brown. Stir in butter and vanilla, blending well. Microwave on high for 1-2 minutes. Add baking soda and stir gently, just until light and foamy. Quickly pour onto lightly greased baking sheet. Cool. Break into small pieces and store in airtight container. Makes about 1 pound. NOTE: For clear caramel-type brittle, omit the baking soda. You can use pecans, cashews or almonds, instead of peanuts. |
