MICROWAVE PEANUT BRITTLE 
1/2 c. sugar
1 c. water
1 c. light corn syrup
3 tbsp. butter
1 lb. roasted, unsalted peanuts
1 tsp. vanilla
1 tsp. water
1/2 tsp. baking soda

Combine sugar, water, and corn syrup in microwaveable bowl (medium to large) and microwave on high until candy thermometer reaches 240 degrees. (Do not put thermometer in microwave). Stir mixture with the thermometer to get accurate reading. When temperature reaches 240 degrees, add butter and peanuts. Stir and put back in microwave. Take it out when the thermometer reaches 300 degrees (9 to 15 minutes). Add vanilla, water, and baking soda. Stir it all in. Spread candy on large, buttered, warm cookie sheet. Let cool and break into pieces.

Note: Each microwave is different. Keep close watch on your temperatures.

Since microwave ovens vary in power, you may need to adjust your cooking time.
