EASY MICROWAVE PEANUT BRITTLE | |
1 c. sugar 1/2 c. white corn syrup 1 c. roasted salted peanuts 1 tsp. butter 1 tsp. vanilla 1 tsp. baking soda Mix sugar and syrup well in 1 1/2-quart casserole or bowl and nuke 4 minutes on High. Add peanuts; stir and nuke 2:45 to 3 minutes. Add butter and vanilla; blend well and nuke 1 to 2 minutes. Peanuts will be light brown and syrup hot. Add baking soda. Stir gently until light and foamy and quickly pour onto greased cookie sheet. Cool 1/2 to 1 hour and break into pieces. Makes about 1 pound. Work fast after adding soda because it hardens fast. Delicious. |
