MICROWAVE PEANUT BRITTLE 
2 c. sugar
1 c. light corn syrup
1/2 c. water
1 1/2 c. raw peanuts (Spanish)
2 tbsp. butter
2 tsp. vanilla
2 tsp. baking soda

Combine sugar, corn syrup and water in buttered large glass mixing bowl; mix well. Microwave for 2 minutes on ROAST or until soft ball forms in cold water (240 degrees). Stir in peanuts and continue cooking for 12 minutes on ROAST, or until candy forms hard brittle threads in cold water (300 degrees). Stir in remaining ingredients until smooth. Divide mixture in half; pour each half onto buttered baking sheet. Spread quickly into thin layer. Cool. Break into pieces. Makes about 2 pounds candy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
