LIME CREAM CHEESE JELLO DESSERT 
This molds beautifully. You can also make this lower calorie by substituting low-fat cream cheese, fat-free Cool Whip, sugar free jello, and unsweetened pineapple.

1 (5 oz.) pkg. lime jello (family size)
1 1/2 cups boiling water
1 (8 oz.) pkg. cream cheese, softened
1 1/2 cups cold water
1 (8 oz.) container Cool Whip
1 (8 oz.) can crushed pineapple, drained
1 cup chopped walnuts

Mix jello with 1 1/2 cups boiling water. Quickly add softened cream cheese and whip mixture with an electric mixer until well blended and most of cream cheese has melted into the mix - be careful as it is hot and the mixer can fling the jello from the bowl if not carefully mixed.

Add 1 1/2 cups cold water then chill in refrigerator until thickened, but not set. This process can take up to an hour so watch carefully to ensure it does not completely solidify.

Add one small tub of Cool Whip, drained pineapple, and chopped walnuts. Chill in refrigerator until set.
