BAKED LIMA BEANS SUPREME 
1 lb. dried lima beans
1 med. onion, quartered
1/2 c. catsup
1 tsp. dry mustard
2/3 c. brown sugar
1/4 c. maple syrup
1/3 to 1/4 lb. sliced bacon

Soak limas in water overnight (or cook on top of range for 1 to 1 1/2 hours). Have limas well covered with water, as they swell while soaking. Place onion in bottom of bean pot. Ladle half of the beans into the pot, reserving the bean water for later use.

Place strips of bacon over beans, then ladle rest of beans into pot. Combine 2 cups of the bean water with the catsup, sugar, syrup, and mustard. Stir well. Pour over the beans. Place rest of bacon on top of beans; then pour the rest of bean water over the beans until they are covered. Cover with lid. Baking time: 2 1/2 to 3 hours or until beans are soft. Stir occasionally while baking. Temperature 325 degrees. Serves 8.
