MEXICAN MEATLOAF 
1 1/2 lbs. ground beef
2 c. corn chips (i.e. Fritos)
1 egg
1/4 c. milk
1 med. onion, chopped
1/2 tsp. garlic powder
1/4 tsp. black pepper
1 pkg. dry taco seasoning

Crush corn chips. In large mixing bowl beat together egg and milk. Add crushed chips and let sit for 5 minutes to soften. Combine all ingredients (reserve 2 teaspoons taco mix). Mix well.

Pack into glass loaf pan. Divide into 2 separate pieces. Keep edge pressed to side. Sprinkle with reserve topping.

Bake on high, covered with wax paper 15 minutes. Halfway through, pour off grease, turn small loaves so ends are in middle. After cooking, keep covered and let stand 10 minutes.
