MEXICAN MEAT LOAF 
1 egg
1/2 c. tomato sauce
1 or 2 (4 oz.) cans chopped green chiles
1 (3 oz.) can drained mushrooms
1/3 c. fine bread crumbs
1 tsp. salt
1 tsp. chili powder
1 1/2 lb. ground beef
3 oz. Jack cheese

Combine egg, sauce, chiles, mushrooms, crumbs, salt, chili powder and a dash of pepper. Add meat and mix well. Invert 2-inch round juice glass in center of 8-inch round cake pan. Shape meat in a ring around the glass. Bake at 350 degrees for 1 hour. Top with cheese and put in oven until it melts.
