16 BEAN SOUP 
1 1/2 c. mixed beans
1 1/2 tsp. salt

Rinse beans. Add salt and water to cover.

Soak 3 hours or overnight. Drain. Put beans in a large pot and add:

2 qt. water
1 lg. onion
1 clove garlic
1 ham bone & 1 lb. ham pieces OR several lean ham hocks
1 lg. can tomatoes
Juice of 1 lemon

Simmer for 4 hours or longer. Add pepper and salt if desired. May be refrigerated covered. Flavor improves with age.
