ZUCCHINI CASSEROLE 
3 c. sliced zucchini (1 lb.)
1/2 c. thin sliced onion
1/2 c. vegetable oil
4 eggs, slightly beaten
2 tbsp. fresh parsley or 1 tsp. dry
1/2 tsp. oregano
1 clove garlic, chopped
1 c. Bisquick mix
1/2 c. grated Parmesan cheese

Grease 9 x 9 inch pan or large pie plate. Preheat oven to 350 degrees. Mix all ingredients together. Bake 30 minutes or until brown.
