ZUCCHINI CASSEROLE 
6 sm. zucchini, sliced med. thin
1 lg. onion, sliced
1 green pepper, cut into chunks
1 tsp. minced garlic
1/4 c. vegetable oil
1 (14 1/2 oz.) can Hunts Italian flavored crushed tomatoes
1 sm. can Hunts tomato sauce
Orzo macaroni (any sm. macaroni will do)

Cook squash, onion, garlic, pepper and oil a little, then add tomatoes and tomato sauce until soft. Cook macaroni according to box directions and drain. Put in casserole dish, cover with grated cheese. Bake until cheese melts.
