VEGETABLE CASSEROLE 
2 lb. zucchini
4 med. potatoes
2 green peppers
2 onions, sliced
2 - 2 1/2 c. peeled, chopped tomatoes (or canned, crushed)
2 cloves garlic, crushed
Pinch of sugar
Salt & pepper
Chopped parsley & dill
1/4 c. olive oil

Peel potatoes. Slice potatoes and zucchini in 1/2" slices. Remove seeds and membranes from peppers and slice. Mix tomatoes with garlic and sugar. Oil a large 9"x13"x2" baking dish and layer the vegetables in it, seasoning each layer with salt, pepper and herbs. Pour oil over the top. Bake, covered at 350 degrees for 1 1/2 hours. Serve hot or cold.
