VEGETABLE CASSEROLE 
20 oz. frozen mixed vegetables
1 c. chopped celery
1 c. chopped onions
1/2 c. mayonnaise
8 oz. carton sour cream
1 c. grated cheddar cheese
1 stick butter
1 c. crushed Ritz crackers
1 can sliced water chestnuts (opt.)

Partially cook frozen vegetables, about 5 minutes; drain. Mix together mayonnaise, sour cream and cheese. Place cooked vegetables in bottom of 11 3/4" x 7 1/2" x 1 3/4" casserole or 9"x13". Layer celery, onions and water chestnuts over vegetables. Layer mayonnaise, sour cream and cheese over this. Mix melted butter and Ritz crackers and place on top of casserole. Bake at 350 degrees for about 30 minutes.
