SPINACH CHEESE CASSEROLE 
1 lb. fresh spinach or 1 lb. frozen chopped spinach
1 lg. tomato
1 lg. Spanish onion
Sliced Shard cheese
3/4 c. bread crumbs
butter

Steam vegetables (spinach and onions) until just cooked (approximately 10 minutes).

Spray 4 cup glass casserole with Pam and start to layer vegetables: 1. onions, 2. spinach, 3. tomatoes, 4. cheese. Continue until casserole is full (last layer should be cheese).

Mix bread crumbs with just enough butter to form small balls. Sprinkle over top of casserole. Bake for 15 to 20 minutes in 350 degree pre-heat oven.

Serve with hot crusty bread.
