CHEESE & SPINACH CASSEROLE 
8 c. wide egg noodles
2 c. cottage or ricotta cheese
2 c. shredded Cheddar cheese
1 1/2 c. (10 oz. pkg.) frozen chopped spinach, thawed & drained
3 eggs
3 1/2 c. (32 oz. jar) spaghetti sauce, divided
Grated Parmesan cheese

Heat oven to 350 degrees. Cook egg noodles according to package directions; drain. Meanwhile, in large bowl, combine cottage and Cheddar cheese, spinach and egg; set aside.

Combine hot egg noodles with 2 1/2 cups spaghetti sauce. Spoon half egg noodle mixture in 3 quart baking dish; top with cheese mixture, remaining noodle mixture and remaining 1 cup sauce. Sprinkle with Parmesan cheese. Cover. Bake 30-35 minutes or until hot and bubbly. 6-8 servings.
