CHEESE & SPINACH CASSEROLE 
1 lb. carton creamed cottage cheese
3 eggs
1/4 c. butter
1/4 lb. American cheese, cut in coarse pieces
3 tbsp. flour
1 pkg. chopped spinach, frozen
Salt (opt.)

Put cottage cheese into mixing bowl. Add unbeaten eggs. Cut cheese and butter in coarse pieces and add to egg mixture. Break up partially thawed spinach. Add flour. Stir until thoroughly blended. Pour into 1 1/2 quart buttered casserole. Bake at 350 degrees until set, about 1 hour. Serves 4 to 6.
