SPINACH CHEESE CASSEROLE 
4 tbsp. butter
3 eggs
1 lb. Monterey Jack cheese, grated
2 pkgs. frozen chopped spinach (drained well)
1 heaping tsp. minced onion
1 tsp. salt
1 c. flour
1 tsp. baking powder
1 c. milk

Melt butter in a 9x13 pan.

In bowl, beat eggs, flour, milk and seasonings. Mix well. Add cheese, spinach and onion. Pour into greased pan (melted butter). Bake 35 minutes, 350 degrees. Cool 30-40 minutes to set. Can then reheat for approximately 20 minutes.
