HOMEMADE MACARONI & CHEESE 
3 tbsp. butter
1/4 cup all-purpose flour
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
2 1/2 cups milk
2 cups Cheddar cheese, grated
1/2 lb. Velveeta cheese
1 cup Mozzarella cheese
1 (16 oz.) box elbow macaroni

In large saucepan, melt butter over low heat. Stir in flour, salt, mustard and pepper until smooth; take off heat. Little by little, stir in milk until smooth. Stir constantly for 10 minutes on heat until thick; take off heat. Stir in 1 1/2 cups Cheddar cheese, Velveeta cheese and Mozzarella cheese until melted.

Put cooked macaroni in a greased casserole dish, pour cheese mixture over and mix well. Sprinkle paprika and leftover Cheddar cheese on top.

Bake at 375°F for 20 minutes.

Recipe can be halved.

Loved it! My husband and my daughter love cheese, and this was definitely a cheesy treat. I had to add an extra tbsp. of flour to make my roux thick enough, but other and that, Everything else in the recipe just seemed to come together perfectly.

My kids are very picky when it comes to Mac & Cheese. This time this one was a home run with them! I added a little more flour also and added a little more Velveeta too. I didn't print this recipe last time and was upset as I thought I wouldn't be able to find it again. It's now printed and the link is in my favorites!

When I was in training for my last job we had a pot luck and I decided to give this recipe a try and EVERYONE loved it! We even had people coming in from other parts of the building wanting to try this Mac & Cheese. My fiance and family love it so much that it's become a new Thanksgiving tradition. If you are making this for the first time, I would cut the recipe in half because this recipe makes a huge portion and it is extremely filling.

Added some diced ham and a bag of frozen broccoli. I'm a cheesaholic so I was happy with it but my family found it very cheese heavy, even with the addition of the ham and veggie.

Add an extra tbsp. "or so" of flour to thicken your rue (roux) then add about a 1/2 cup of dry white wine at the end of the sauce. The wine will thin and cream the cheese sauce and tastes incredible after it bakes for 30 minutes.

Coat some store bought bread crumbs in a little melted better and sprinkle on the top during the last 5 minutes of baking.. Yum yum!

I actually doubled the flour, and substituted 1/2 lb. White Cheddar in place of all the cheese, and Dijon mustard for the dry mustard. Probably the best mac and cheese I've ever had.
