PEPPER AND CHEESE OMELETTE 
10 eggs
Salt and pepper
4 tbsp. water
1 c. Parmesan cheese
4 tsp. butter
1 c. grated gruyere cheese
1 red or green pepper, thinly sliced

Lightly beat eggs with salt and pepper to taste and the water. Mix in the Parmesan cheese. Melt the butter in a fry pan and pour in the beaten eggs. Cook over low heat. Sprinkle the grated gruyere cheese and pepper. Place under a hot grill and cook for a few minute or until the cheese melted. Remove form pan; fold over. Serves 4.
