HONG KONG MEAT LOAF (MICROWAVE) | |
2 lbs. lean ground beef 1 c. soft bread crumbs 2 well beaten eggs 1/2 c. finely chopped green pepper 1/2 c. finely chopped onions 2 tbsp. soy sauce 1 tbsp. Worcestershire sauce 2 tbsp. lemon juice 3 tbsp. brown sugar 1 tsp. ground ginger Combine beef, bread crumbs, eggs, onion, green pepper, 1 1/4 tsp. soy sauce, 2 tbsp. Worcestershire sauce, lemon juice, 2 tsp. brown sugar and ginger. Mix well. Spoon into 9x5x3 inch glass loaf pan. Smooth top. Bake in microwave 8 minutes. Turn loaf pan and bake 7 minutes longer. Combine remaining soy sauce, Worcestershire sauce and brown sugar. Mix well. Spoon 1/2 mixture over meat loaf and spread. Bake 8 minutes. Turn meat loaf out onto serving platter and pour remaining mixture on top. Let stand 10 minutes. Serves 6. |
