HONG KONG MEAT LOAF (MICROWAVE) 
2 lbs. lean ground beef
1 c. soft bread crumbs
2 well beaten eggs
1/2 c. finely chopped green pepper
1/2 c. finely chopped onions
2 tbsp. soy sauce
1 tbsp. Worcestershire sauce
2 tbsp. lemon juice
3 tbsp. brown sugar
1 tsp. ground ginger

Combine beef, bread crumbs, eggs, onion, green pepper, 1 1/4 tsp. soy sauce, 2 tbsp. Worcestershire sauce, lemon juice, 2 tsp. brown sugar and ginger. Mix well. Spoon into 9x5x3 inch glass loaf pan. Smooth top. Bake in microwave 8 minutes. Turn loaf pan and bake 7 minutes longer. Combine remaining soy sauce, Worcestershire sauce and brown sugar. Mix well. Spoon 1/2 mixture over meat loaf and spread. Bake 8 minutes. Turn meat loaf out onto serving platter and pour remaining mixture on top. Let stand 10 minutes. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
