ALFREDO PASTA CASSEROLE 
A simple and delicious recipe.

1 (16 oz.) box ziti pasta (I use Barilla)
6 bacon strips, cut into squares (I use turkey bacon)
1 small onion, chopped
1 carrot, peeled and chopped
1 tbsp. olive oil
chopped parsley (optional)
1 (15 oz.) jar alfredo sauce (or homemade)
Mozzarella cheese, for sprinkling
Parmesan cheese, for sprinkling

Prepare pasta according to package directions.

In a skillet over medium heat fry bacon. After the bacon begins to brown throw in the onion and carrots with a splash of olive oil. After the whole mixture has cooked through drizzle on the alfredo sauce (I use the recipe below) and mix thoroughly.

Drain pasta and add it into the mixture as well. After everything is mixed together transfer to an oven proof dish. Sprinkle Mozzarella cheese and a little bit of Parmesan.

Bake at 350°F for 20 minutes or until the cheese begins to melt and brown.

Note: You can add a little extra cheese after it has come out of the oven.

HOMEMADE ALFREDO SAUCE:

1 (8 oz.) pkg. cream cheese
1/2 cup (1 stick) butter
1 cup half & half (may sub with 1/2 cup milk and 1/2 cup heavy cream)
1/3 cup grated Parmesan cheese
1 tbsp. garlic powder

In a saucepan, add ingredients and stir until combined over low heat.
