MICROWAVE MEATLOAF 
8 oz. tomato sauce
1/2 c. brown sugar
1/4 c. vinegar
1 tsp. dijon style mustard
1 lg. egg
1 med. onion
1/4 c. dry bread crumbs
2 lbs. ground beef
1 1/2 tsp. salt
1/4 tsp. pepper
Ketchup (optional)

Combine tomato sauce, brown sugar, vinegar, and mustard. Set aside. Combine egg, onion, bread crumbs, ground beef, salt, and pepper in large bowl. Add 2/3 cup of the tomato sauce (freeze the rest) and mix well.

Place roasting rack in baking dish. Spray rack with cooking oil for easier clean up. Place meatloaf on rack and shape into loaf with a depression in the center. Make sure the depression is running the width of loaf (not lengthwise). Garnish with Ketchup and green pepper rings if desired.

Cook, uncovered, 25-30 minutes on roast 70% power or until center is done. Cover with foil and allow to stand for 10 minutes before serving.

For small family: Divide into two equal size loaves. Each should be microwaved 16-20 minutes on 70% power (roast). Let stand 10 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
