FRENCH COCONUT PIE 
1 stick butter, melted and cooled
1 1/2 c. sugar
2 tbsp. flour
1 tbsp. vanilla
1 tbsp. vinegar
3 eggs
1 c. coconut
1 (9-inch) unbaked pie crust

Combine butter, sugar, flour, vinegar and eggs, add coconut. Blend well. Pour into pie crust.

Bake at 300°F for 45 minutes or until it does not shake.
