BAKED SALMON WITH A HINT OF
AWESOME
 
1 pound (ish) of FRESH Atlantic (or whichever your prefer)
1 lemon
fresh parsley
sweet onion
green bell pepper
brown sugar (about 4 TABLEspoons - "the medium-bigger one" lol)
salt and pepper
oven and oven mits
about an hour to an hour and a half to spare :)
aluminum foil (optional)

I've always liked cooking. Since I started P90X, I've been doing a lot more of it. I thought this recipe came out even better than other times I've made it. So, I decided to share!

1. Cutoff the unattractive ends of the fillet (unless you don't mind that little tip at the end) and cut in to 3 smaller fillets.

2. Rinse gently and pat dry. (make sure to pat it dry or it will come out too moist)

3. Place fillets into Pyrex or cook-able glass container, next to one another. I suppose you can use a cooking sheet with the fillets in aluminum foil, if you don't have Pyrex. Cooking time will be a bit shorter with this option.

4. Sprinkle salt and pepper over fillets.

5. *Awesomeness here* Add a light topping of brown sugar to the top of fillets. The more evenly spread, the better.

6. Chop about 1/4 cup of the sweet onion and 1/4 cup of parsley (fresher the better) and mix together. Evenly cover the brown sugar topping.

7. *More Awesomeness here as well* Rinse and cut the ends off the green bell pepper and remove/rinse out seeds. Now, you have a hollow pepper tube. Stand the pepper on one end and cut vertical slices about a quarter inch or about two pencils wide. Place these along sides and in between fillets, in your cooking dish or aluminum foil.

8. Make about 5 or 6 thin slices of lemon and cover the top of salmon.

Cover and let sit in refrigerator for about 30 minutes.

Now you can start the oven and preheat to about 375-400°F.

BAKING:

The first time I made this it was GREAT, but, just a liiiiitle too moist. Some people like it that way though.

- Moist: Cover with aluminum foil and bake at 375°F for 20 to 25 minutes

*** I keep the rack about mid to mid/low in the oven. ****

The second time I made this I cooked uncovered at a higher heat, for a shorter time. For me, it was AWESOME!

-Less Moist: Bake, uncovered, at 400°F for 15-20 Minutes.

You can add more lemon to taste.

I almost always have steamed vegetables with my salmon. You can use the green bell, add some carrots, and delicious broccoli to a steamer and it's perfect!
