RUCKER'S MAYONNAISE 
1 egg
1 tbsp. vinegar
1/2 tsp. dried mustard
1/2 tsp. salt
1/4 tsp. cayenne pepper
1/4 tsp. cracked pepper
1 c. vegetable oil
1 tbsp. lemon juice

Combine first 6 ingredients in small bowl and beat well. Gradually add oil and continue beating at medium speed until soft peaks form. Add lemon juice and beat a few minutes longer. Refrigerate.

(Note: If mayonnaise seems too soft, you may need to beat in a little more oil, but it will not be as stiff as commercial brands.)
