QUICK MADE MAYONNAISE 
2 whole eggs
1 tsp. salt
Black pepper or cayenne
1/2 tsp. mustard
2 c. fresh salad oil
3 tbsp. lemon juice or vinegar
1/4 tsp. celery salt, if desired

Put eggs and seasonings into blender; add 3 tablespoons oil and blend for 1 minute; add remaining oil in a fine stream through the top opening while blender runs; blend 2 minutes or until thick and smooth. You might have to stop blender and scrape down sides. makes about 2 1/2 cups.
