MOM'S PEACH COFFEE CAKE 
1 egg
1/2 tsp. lemon extract
1 c. sugar
1 tsp. baking powder
1/4 c. milk
2 c. sliced, fresh peaches
1/2 tsp. cinnamon
1/4 tsp. vanilla
1 c. flour
1/2 tsp. salt
3 tbsp. oil

Preheat oven to 375°F. Grease and lightly flour a 9x13 inch baking pan.

Beat egg. Add 1/2 cup sugar. Sift flour, baking powder and salt. Add with milk to egg mixture. Fold in oil, lemon and vanilla. Spread batter in greased pan. Put sliced peaches on top. Mix remaining 1/2 cup sugar and cinnamon and spread on top.

Bake at 375°F for approximately 30 minutes.

Freezes well.

Yum! I wanted a peach coffee cake recipe that didn't call for tons of butter, and this fit the bill nicely. I increased vanilla to 1 tsp. and reduced the amount of sugar to sprinkle on top to 1/4 c. I'll try adding some sour cream in place of the oil next time, just out of curiosity.

Definitely a keeper, BUT I doubled the recipe (at least for the base) for a 9x13 pan, otherwise bake this in an 8x8 pan.
