MOM'S PEACH COFFEE CAKE | |
1 egg 1/2 tsp. lemon extract 1 c. sugar 1 tsp. baking powder 1/4 c. milk 2 c. sliced, fresh peaches 1/2 tsp. cinnamon 1/4 tsp. vanilla 1 c. flour 1/2 tsp. salt 3 tbsp. oil Preheat oven to 375°F. Grease and lightly flour a 9x13 inch baking pan. Beat egg. Add 1/2 cup sugar. Sift flour, baking powder and salt. Add with milk to egg mixture. Fold in oil, lemon and vanilla. Spread batter in greased pan. Put sliced peaches on top. Mix remaining 1/2 cup sugar and cinnamon and spread on top. Bake at 375°F for approximately 30 minutes. Freezes well. |
