BLUEBERRY TEA CAKE 
2 c. sifted flour
2 tsp. double acting baking powder
1/2 tsp. salt
1 c. sugar
1/2 c. shortening, room temp.
1 egg
3/4 c. milk
1 1/2 tsp. vanilla
1 c. blueberries

Sift together flour, baking powder, salt and sugar.

Add shortening, egg, milk and vanilla. Beat with electric mixer until dry ingredients are dampened. Beat at medium speed for 3 minutes. Fold in lightly floured blueberries.

Sprinkle granulated sugar on top before baking.

Bake at 350 degrees for 55 to 60 minutes.
