APRICOT SQUARES 
3/4 c. shortening
1 c. sugar
1 egg
1 tsp. vanilla
2 c. + 1 tbsp. flour
1/2 tsp. baking powder
1/2 c. coconut
1/2 c. chopped nuts
12 oz. jar "Polner" apricot preserves

Cream shortening, sugar, vanilla, egg, flour and baking powder. Add nuts and coconut. Spread 2/3 of the batter in a 9"x13" greased pan. Spread preserves on the batter. Add the rest of the batter. Bake at 350 degrees for about 35 minutes. This is Mr. Deshaies' favorite dessert!
