CHICKEN WITH APRICOT GLAZE 
2 1/2 to 3 lb. frying chicken, cut into serving pieces
1/4 c. flour
2 tbsp. butter
2 tbsp. oil
1/2 c. apricot jam
1 tsp. marjoram
1 tsp. grated lemon rind
2 tsp. sherry
1 tsp. soy sauce
Dash sesame hot oil
Dash ground ginger
1 (16 oz.) can whole peeled apricots, with juice
1 lg. greenpepper, cut into squares

Wash and dry chicken, coat with flour. In a large skillet, brown chicken in heated butter and oil. After browning, coat chicken pieces with jam. Combine marjoram, lemon rind, soy sauce, sherry, ginger, sesame, hot oil and apricot juice. Pour over chicken. Cover and simmer until tender, about 40 minutes basting occasionally. Add green pepper and cook 5 minutes more. Meanwhile pit apricots and add just before serving. About 445 calories.
