NATALIE'S GARDEN SPECIAL (MAKES
6 OR 7 QUARTS)
 
4 qts. ripe, peeled tomatoes after cut (8 lb.)
1 qt. celery (leaves, too) (2 lb.)
1 qt. onions (2 lb.)
1 qt. water
6 big peppers
3 tbsp. salt
1 tbsp. sugar

Dice peppers, onions and celery. Add water. Cook 20 minutes. Add tomatoes, sugar and salt. After boiled, put in hot jars and process 25 minutes per quart. Or, after mixture is cooked, place in freezer boxes and freeze.

I put a bag in the box to hold the mixture until frozen, remove and then reuse the box. Special is used in soup, spaghetti, meat loaf, etc.
