RANCH CAKE 
1 1/2 c. boiling water
1 c. uncooked oatmeal
1 stick butter
1 1/2 c. flour
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 c. minus 2 tbsp. sugar
1 c. brown sugar (packed)
2 eggs (beaten)

Break butter into chunks and pour boiling water over oatmeal and butter. Stir until butter melts then set aside.

Sift flour, soda, cinnamon and salt then add to oat mixture. Mix well then add both sugars. Add eggs and mix thoroughly. Put in a 9x13 inch pan and bake in a 375 degree oven for 25 minutes.

TOPPING:

3/4 c. brown sugar (packed)
2 tbsp. milk
6 tbsp. butter
1/2 c. pecans
1 c. coconut

Combine sugar, milk and butter. Boil one minute then remove from heat. Stir in pecans and coconut. Spread on warm cake then place under broiler long enough to brown slightly.
