OATMEAL CAKE 
1 1/2 c. boiling water
1 c. quick oats
1 c. brown sugar
1 c. white sugar
1/2 tsp. salt
1/2 c. shortening
2 beaten eggs
1 1/2 c. sifted flour
1 tsp. baking soda
1 tsp. cinnamon or 1 tsp. vanilla

Stir oats into boiling water and let stand 20 minutes. Cream shortening with sugars. Add 2 beaten eggs. Sift together other dry ingredients. Add to creamed mixture. Then add oatmeal mixture. Bake in 7 1/2 x 12 inch cake pan. Oven temperature: 350. Bake for 35-40 minutes.

TOPPING:

1 stick butter (equals 1/2 c.)
1 tsp. vanilla
1/2 c. brown sugar
1 c. flaked coconut
1/4 c. milk, cream or evaporated milk
1 c. chopped nuts (optional)

Melt ingredients together over low heat. Spread on cake as it comes from the oven. Optional: You may brown the coconut in the oven on low rack or brown in broiler.
