OATMEAL CAKE AND TOPPING 
1 c. quick oatmeal
1 1/2 c. boiling water
1 c. granulated sugar
1 c. brown sugar
1 c. shortening
1 1/2 c. flour
2 eggs
1 tsp. vanilla
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt

Soak oatmeal in boiling water. Mix sugar, add to shortening, cream. Add eggs one at a time, beating after each addition. Add oatmeal to creamed mixture. Sift together dry ingredients. Gradually add to first mixture. Add vanilla. Bake in prepared pan for about 35 minutes at 350 degrees.

TOPPING:

1 c. brown sugar
4 tbsp. butter
1 c. coconut
1/2 c. cream or milk
1/2 c. nuts, chopped

Cream sugar with butter. Add coconut. Stir in cream. Spread on top of cake and sprinkle with nuts. Put cake in broiler until the topping bubbles and spreads over the top of the cake.
