OATMEAL CAKE WITH BROILED
TOPPING
 
1 1/2 c. quick cook oats
1 1/4 c. boiling water
1 c. sugar
1 c. brown sugar
1/2 c. butter
1 tsp. vanilla
3 eggs
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. nutmeg

In a bowl combine oatmeal and boiling water - let stand for 20 minutes. In a bowl beat together sugar, brown sugar, butter, vanilla, and eggs - blend well. Lightly spoon flour into measuring cup and level off. Add to previous sugar mixture and blend well. Add oatmeal, baking powder, baking soda, salt, cinnamon, and nutmeg - mix well. Pour into greased 13 x 9 inch pan. Bake 35-45 minutes at 350 degrees.

TOPPING:

2/3 c. brown sugar
1/4 c. butter
3 tbsp. Half and Half
1 c. coconut
1/2 c. walnuts

In a bowl combine brown sugar, butter, and Half and Half; beat at high speed until smooth. Stir in coconut and nuts. Spoon over cake while it is still warm. Spread. Broil about 5 inches from heat 1-2 minutes until bubbly. Cool.
