SWEET POTATO CUPS | |
2 lbs. sweet potatoes or yams 2 tbsp. butter 2 tsp. grated orange peel 1/2 tsp. salt 1/2 c. dark or golden raisins Orange Shells (see below) Marshmallows Cook sweet potatoes in small amount of boiling, salted water until tender, about 20 minutes. Cool slightly; peel and mash. Add butter, orange peel, and salt. Beat until fluffy, adding a little orange juice or milk if potatoes seem dry. Stir in raisins. Heap into Orange Shells. Top with marshmallows. Bake in 350 degree oven for 20 minutes or until thoroughly heated. Makes 6 servings. Orange Shells: 6 oranges. Cut slice off top of large, firm oranges. With grapefruit knife or other small knife, cut and scoop out fruit, to make a "cup" of peel for sweet potatoes. |
