CALIFORNIA SWEET POTATO BAKE 
4 med. sweet potatoes or 1 (1 lb. 2 oz.) can (3 c.) sweet potatoes
1/2 c. brown sugar
1 tbsp. cornstarch
1/4 tsp. salt
1 c. orange juice
1/4 c. seedless raisins, optional
1/4 c. butter
3 tbsp. sherry
2 tbsp. chopped walnuts
1/2 tsp. shredded orange peel

Cook sweet potatoes in salted water until tender; peel and halve lengthwise (or use canned). Arrange in shallow baking dish. Sprinkle lightly with salt.

Mix brown sugar, cornstarch, salt. Blend in orange juice. Add raisins if desired. Stir while bringing quickly to boiling. Add butter, sherry, walnuts and orange peel.

Bake uncovered at 350 degrees for 20 minutes or until potatoes are well glazed. Serves 4.
