4 med. sweet potatoes or yams
1/2 c. brown sugar
1 tbsp. cornstarch
1/4 tsp. salt
1 c. orange juice
1/4 c. raisins
1/4 c. butter
3 tbsp. cooking sherry, optional
2 tbsp. chopped walnuts
1/2 tsp. orange peel

I use part orange juice and pineapple juice off pineapple chunks. Use chunks around sweet potatoes. Mix brown sugar, salt, 1 cup juice, cornstarch and raisins until nice and bubbly, cook and put potatoes and pineapple chunks in long baking dish and walnuts. Pour cooked mixture over all. Bake at 350 degrees for 20 minutes.
