CALIFORNIA POTATOES 
3 tbsp. butter
3 med. baking potatoes, unpeeled, boiled & diced
1 1/4 c. grated Monterey Jack cheese
1 1/4 c. grated cheddar cheese
2/3 c. diced tomato (about 1 med.)
2 tbsp. minced onion
2 tbsp. chopped green onion
1/2 c. diced avocado
1/2 c. sour cream
Salt & pepper

Melt butter. Add diced potatoes and cook until browned and crisp in heavy large skillet over medium-high heat, stirring frequently. Add cheeses, tomato and onion and stir until cheese melts. Season with salt and pepper. Gently mix in avocado. Spoon onto plates with sour cream and serve. Makes 2 main course or 6 side-dish servings.
