FRENCH COCONUT PIE 
1 1/3 c. coconut
1/4 c. buttermilk
1 tsp. vanilla
3 eggs
1 1/4 c. sugar
3/4 stick butter

Beat eggs slightly. Add sugar, butter and buttermilk. Then coconut. Mix well and pour into unbaked pie shell. Cook at 375 degrees for 10 minutes. Cut down to 300 degrees and cook until brown.
