OLD TIME FRENCH COCONUT PIE 
1 stick butter
3 eggs, beaten
1 1/2 c. sugar
1 tsp. vinegar
1 c. coconut
1 tsp. vanilla

In saucepan, melt butter; remove from heat and add remaining ingredients. Blend thoroughly. Pour into unbaked pie shell and bake at 350 degrees for about 1 hour.

PIE SHELL:

3 c. flour
1 tsp. salt
1 1/4 c. shortening
1 egg, beaten
3 tbsp. vinegar

Mix flour and salt, cut in shortening and work until mixture is coarse. Add the egg and vinegar. Roll out on floured surface. Makes 3 or 4 crusts.
