CHINESE ALMOND COOKIES 
1 c. (2 sticks) butter
3/4 c. sugar
1 tsp. almond extract
2 c. sifted all purpose flour
1/2 tsp. baking powder
1/2 c. ground almonds
1 pinch salt

In mixing bowl, cream butter. Add sugar, beat until fluffy and light. Add almond extract. Sift together flour and baking powder. Gradually add to creamed mixture. Blend in ground almonds. Shape into balls using a level tablespoon of dough for each cookie. Roll each cookie in sugar. Place on baking sheet. Press flat with greased bottom of a glass tumbler. Top each cookie with one whole almond. Bake 10 to 12 minutes at 350 degrees. Grandma Grace's favorite cookie (and everyone else, too!).
