HARVARD BEETS 
3 c. beets, sliced
1/2 c. sugar
1/4 tsp. salt
1 tbsp. butter
1 tbsp. cornstarch
1/4 c. beet juice
1/2 c. vinegar

Mix together sugar, salt and cornstarch. Add beet juice and vinegar. Cook until it starts to thicken. Add butter and beets. Cook 5 minutes over low heat.
