TROPICAL BREAKFAST SANDWICH 
1 1/4 cups well drained crushed pineapple
3/4 cup mashed ripe banana
1/2 cup softened cream cheese
1/2 cup chopped pecans or walnuts
12 slices enriched white bread
2 eggs, beaten
1/2 cup milk
few drops vanilla
1/2 teaspoon salt
butter for frying

Mix together pineapple, banana, cream cheese and pecans. Spread on 6 slices bread. Top with remaining slices. Slice each sandwich in half diagonally.

Beat eggs, milk, vanilla and salt in a shallow dish. Dip each side of sandwich into egg mixture.

In a hot skillet with melted butter, sauté on both sides.

Serve with pats of butter and syrup or jelly.
