BREAKFAST PITA SANDWICHES 
Vegetable cooking spray
1/2 c. thinly sliced fresh mushrooms
1/4 c. chopped onion
1/4 c. chopped green pepper
3 egg substitutes or 6 egg whites, beaten
1/2 c. diced, cooked lean meat (turkey, chicken or seafood)
1/4 c. low-fat cottage cheese
1/8 tsp. pepper
1/4 c. (1 oz.) shredded low-fat cheese
2 (6 inch) whole wheat pita bread rounds, cut in half crosswise

Coat medium skillet with cooking spray; place over medium heat until hot. add mushrooms, onion and green pepper to skillet; saute until tender.

Combine eggs, meat, cottage cheese and pepper in a small bowl; pour over vegetables. Cook over medium heat, stirring often, until eggs are firm but still moist. Stir in cheese. Spoon 1/2 cup mixture into each pita half. Serve immediately. Yield: 4 servings (143 calories per serving).
