NUTTED WILD RICE 
1 1/4 c. wild rice
5 1/2 c. chicken broth
1 c. shelled pecans
1 c. yellow raisins
Grated rind of 1 lg. orange
4 scallions, thinly sliced
1/4 c. olive oil
1/3 c. fresh orange juice
1 1/2 tsp. salt
Freshly ground pepper to taste

Put rice in strainer. Rinse thoroughly under cold water. Place rice in medium size heavy saucepan. Add chicken broth and bring to rapid boil. Adjust heat to gently simmer. Cook uncovered 45 minutes. After 30 minutes, check for doneness. Rice should not be too soft. Drain rice in colander. Transfer to bowl. Add remaining ingredients to rice and toss gently. Adjust seasonings to taste. Let stand 2 hours for flavors to develop.
