FRUIT 'N' NUT RICE 
1 can (8 oz.) crushed pineapple in juice
1 can (8 1/2 oz.) pear quarters or halves in juice
1 c. fast-cooking brown rice
1/8 tsp. ground cinnamon
2 tbsp. chopped prunes or raisins
2 tbsp. chopped dried apricots
2 tbsp. chopped peanuts

1. Drain juice from pineapple and pears into liquid measuring cup. Add enough liquid to equal 1 1/4 cup.

2. In medium saucepan bring fruit juices to a boil. Add rice and cinnamon, cover, and cook 10 minutes or until rice is tender.

3. Chop pears and add to rice with pineapple, prunes, apricots, and peanuts. Cook stirring gently, 2 to 5 minutes until heated through.
