MASHED POTATOES WITH SCALLIONS 
3 lb. boiling potatoes, about 12
8 scallions
6 tbsp. butter
Salt and pepper
6 tbsp. milk

Cut potatoes in chunks. Put in large pot with salted water to cover. Bring to a boil and cook until tender, about 25 minutes. Drain. Slice scallions, including green tops. Melt butter in the pot used to cook the potatoes. Add scallions to butter and cook over low heat until tender, about 5 to 10 minutes.
