MASHED POTATOES WITH SCALLIONS 
Approximately 3 lbs. potatoes
8 scallions
6 tbsp. butter
Salt (to taste)
Pepper (to taste)
6 tbsp. milk

Peel potatoes and cut into chunks. Put into large pot in salted water. Bring to a boil and cook until tender. Drain. Chop scallions, including the greens. Melt butter, using the pot the potatoes were cooked in. Add scallions and cook approximately 10 minutes. Mash potatoes with salt, pepper and milk. Stir into scallions and heat through.
